Day 2 - Poached Salmon with Hollandaise Sauce and Roasted Red Sweet Potatoes

Freaking long title...but damn all that butter.  Should be yummy.

So far all I've got going is the potatoes, or rather, potato - as it was ginormous (I should have taken a photo, my bad.) Roasting pleasantly away in the oven, warming up the kitchen; although it doesn't smell like anything yet. Olive oil, salt, pepper and a bit of cayenne. (It's reported now as being quite spicy by the spice expert in the house.) They're like spicy candy.

Side note: I'm not really digging the default background here, so I'll have to come up with something different.

Now, while I have eaten most of the ingredients in this dish, and even prepared one of them, I've never made hollandaise sauce, nor have I ever cooked sweet potatoes [except one really lame attempt to make sweet potato fries. Did not end well.  Oops.]

This is the recipe I'm using.  I'm pretty much following it to the letter except for the garnish of the chives, I forgot to buy them. (Swiss cheese memory and all, Al.)

2 attempts at Hollandaise sauce...ruined.  First one due to a bowl that broke in half and second one due to bad technique or something.  Turned into scrambled eggs swimming in butter.  Bah humbug.  Am out of eggs now, so I can't try again.  Ruined 6 lovely eggs and now poached salmon with no sauce...

Jeremy is either crazy or a brave soul as he is going to try the eggs swimming butter sauce...

He thinks maybe it could be more like the butter sauce that you dip lobster in.
