So Tuesday night, I was down with a fever and a cold/the flu/some weird bug, however I did eat garlic, mushroom, and lentil soup (a few bites anyway) which is something I've never had. It tasted good at first, but the veggie bits started to feel very rough on a poor sore throat, so I had to stop eating it.
Wednesday I managed to make Hoisin glazed salmon with quinoa, because essentially, even though I was exhausted, all I had to do was turn on the oven, put some spices and some of the sauce on the fish, and put it in the oven. The quinoa was pretty quick, so all in all I was up and cooking for less than 30 minutes I think. Which is good, because I kind of just collapsed after that and was a lump on the couch for the rest of the evening. Which lasted until all of 8:15pm.
Thursday night, I made swiss chard/mascarpone/ricotta filled buckwheat crepes with mozzarella cheese on top. Just trying to use up some leftovers. It wasn't bad.
Hopefully this stupid flu/cold/bug thing will go away soon and I can get my energy back for the challenge.
