This is the recipe I'm basing my creation off of. I used store-bought dough, as I was hoping to make this faster; alas that did not happen.

So the adventure didn't start out on a smooth note, as the recipe called for those little red Thai chilis, which I went to two stores to find, and neither one had them. So had to omit those, I thought I had peanut butter at home already, and I did not. I failed to get chili oil, so - another trip to the store.
So let's get started on that chicken, huh? The recipe just said to cook it, so I just used salt and pepper, and cooked it in a pan. Came out pretty good since I basically ignored it until I got the sauce done.
Rolling out pizza dough is harder than it looks, I probably made it tough with how much I had to work it in order to get it to a reasonable size. Guess I just need to practice.
In the process, I managed to get a ton of flour down the front of my shirt, and pretty much all over the kitchen...Sadness that since it is February, Jeremy is mostly excused from chores.
It smells really good in here, so that's a good sign. This calls for cilantro, which I hate, so I'm using Thai basil instead. So aside from the missing chilis, that's really the only change I made to this recipe.

It has a bit of a kick to it even without the red chilis. Jeremy expressed that if I put more carrots & onions on as the final garnish it would make it seem more "Thai."
I think I might do something French tomorrow...so if anyone has any suggestions (I don't eat lamb, ever.)

ReplyDeleteThe Thai basil provided the kick that you were missing from the chilis. That's a good substitution. For the dough, if it's difficult to stretch, you need to let it rest. If you give it 5 - 10 minutes to rest, the proteins will relax and they will be stretchable again. Good luck with your project from another RPM widow!
