This is the recipe I used for the chickpea stew: Mediterranean Chickpea Stew
I think it turned out pretty well, as I am eating the leftovers today. Chickpeas are somehow a little dry, even though they've been sitting in liquid for 3 days now. Oh well, still tastes good.
Chickpeas, roasted garlic, tomatoes, bell peppers, onion, cumin. I reheated it today with some fresh cherry tomatoes, and added some mozzarella cheese, because really, cheese makes everything better.
Saturday night, I also made (which I probably shouldn't have, as making 2 brand new recipes kind of wore me out, and I had no energy to try something new come Sunday) a spicy dark chocolate souffle. It didn't rise like the picture showed, but it still tasted completely awesome. I'll have to post pictures when I get home this evening, as they are all on the camera.
Last night, we went out for Valentine's Day to a favorite place we haven't been to in a long time, The Sapphire Hotel. They have my all time favorite cheese plate and one of my favorite cocktails, the Lounge Singer. The cheese plate comes with 3 cheeses that you get to pick from a list of 5, grapes, bread, figs, sliced apple, candied walnuts, and one entire head of roasted garlic. YUM! The Lounge Singer is fig infused bourbon with pomegranate Manhattan. I highly recommend this place.
The hubby got me the pasta roller attachment for my mixer, so expect more noodle dishes coming up. ;-)
