Spicy Dark Chocolate Souffle

I will have to write up the recipe later, with proper credit, as I can't remember it off the top of my head. But it is essentially a ton of dark chocolate (some spicy), sugar, eggs, and salt. Not complicated in ingredients, but, it was a bit of a pain to put together.

You have to melt the chocolate, then add the egg yolks and sugar when the chocolate is still warm, but not hot enough to make chocolate scrambled eggs. Meanwhile, you whip the whites into submission and set aside. The recipe I used called for 3 individual ramekins, and this is where I got off track a bit. I didn't have 3 clean ones available to me, so I used one large one. Alters the cooking time a wee bit. Or rather, a lot.

Anyway, you put a small amount of the whites into the chocolate mixture to lighten it up. Then very gently, and with as few turns as possible, fold the remaining whites into the chocolate. It will look marbled and weird. Don't worry. Unfortunately, mine did not rise very high, but it still tasted pretty awesome.
